Pretty much ever since we moved to Oregon we've had our friend Brian over for dinner every Tuesday night. I really love to entertain, and having Brian is no-pressure, just hanging out and having a good time. I try and have something yummy for dessert whether it be some box brownies (which I personally think are better than home made), or ice cream, or warm cookies, etc. Last night I looked in my cupboard and I had a white cake box mix and I thought "well, that's easy enough but needs a little something." I decided I'd make some lemon curd to go in the middle and then just put some white whipped can frosting on top -YUM. Well, I started in on the lemon curd w/out reading thru the instructions...I was in too deep to turn back but when it said to bust out the Cuisinart I thought maybe I had been a little over zealous on just throwing something together for our dessert. Sigh. Anyway, to make a not- so- interesting story short, I made it, it was delish and when I have more time on my hands (rather than a few minutes before Brian walks in the door) I will happily make it again. :)

I LOVE lemon curd....and yes, it does require time and usually makes a mess, but it's worth every bit of trouble:) This looks yummy, Molly, and you can make it for me any time!

I'm a fan of lemon curd, so I'm sure it was tasty. I just want to swipe my finger to pick up that dollop of frosting that's about to fall off in the middle of the cake.
loooooove! love that you love to entertain (no surprise, as I love it - duh) and LOVE this little whipped up dessert.....I'll be right over with a fork.
And I just made some boxed brownies tonight. Truly better than 'scratch' - and I just made a Paula Deen boxed brownie mix. UM. THE. BEST.
