hodge podge

Hope everyone had a good weekend! For some random reason I haven't been able to move my neck for about 4 days, I think I'm finally on the mend. I've been taking meds/using icy hot patches/bengay cream, etc. non-stop and I think I'm finally making the turn. So painful!

We have my in-laws coming into town this week (yay!) and my house is a mess (which happens when you don't do anything due to a sore neck) so I've got my work cut out for me the next few days! I'm going to try a couple new recipes for my father-in-law's bday, a skirt steak recipe I cut out of a magazine, and a 6 layer salted chocolate carmel cake recipe that I also cut out of a magazine, hope they turn out!

I tried this brisket recipe the other day and tonight I'm trying these taco stuffed shells. The brisket was so easy and so delish so you gotta try it if you like brisket, I'll let you know how the taco shells go!

Tomorrow is our last mi casa of the semester...sad! Where does the time go?!! My babies are going to be juniors -what?!!!!! I swear they were just timid freshman 2 seconds ago!! The other day one of my girlies was saying she wanted to get me a "Baylor Mom" bumper sticker for my car....I'm too young for that!! But I do love these guys and am sad they are leaving for the summer already! Sniff.

I think summer has officially come to Waco. Its starting to creep to the high 80s and low 90s, we're in for a LONG hot summer already! Speaking of summer, I'm working on my summer travel schedule for Washington/Oregon photo shoots so if you're interested check back for that info or shoot me an email! I can tell you that all sessions will take place in July -that much I know!

Okay, I think that's all the randomness I have for today. Sorry no photos but I literally have hardly moved for days, neck pain is no good. More to come! xo

yummy chicken and a sweet senior

I try lots of new recipes but I would say many of them don't make a lasting impression on me. Don't get me wrong, most of them are tasty but every once in a while I try something and I'm like "YES! This will make a regular appearance!" The other night was one of those nights, this chicken will be a regular in the Winn household. It was SO good, easy to make, and satisfied my deep longing for the Mediterranean Cafe in Pasadena that I miss terribly. I ran to the local Mediterranean joint here to grab some hummus to go with it and it was a delicious dinner (our friends we had over thought so too!). So, try this chicken, you will not be disappointed! (and if you come to my house for dinner and that's what I serve, don't be surprised!). :)

my snail hunter

Waco has an insane amount of snails, they are every.where.! Brennan has gotten quite fond of these little creatures and plays with them every chance she gets, she calls them her pets. :) The other day she was outside lining them up along the fence, too cute not to share. xo

update

Good morning!
I'm in a big rush to head out the door this morning but wanted to let ya'll know we'll be staying in Waco! The school hasn't contacted us yet but Adam knew a friend of his was his competition and she emailed him last night to let us know she was offered the position and is taking it. So, Brennan's prayers were answered and Waco will be our home for another year at least. Thanks to everyone for your prayers, emails, texts, etc.. so great to have such love surround us. Happy Monday! xo

Friday randomness

Happy Friday, all!

So last night for dinner I tried this garlic mac and cheese, delish! I drained the milk mixture before I added it to the noodles to get rid of the garlic bits that weren't smooth, and I put cooked bacon on top (I think that made a huge difference). If I would've had more bacon I would've put some into the mixture rather than just on top (I'm of the opinion that most things are better with bacon). :) So, if you're a mac and cheese fan and love garlic, I'd definitely try this one!

The other night we had some friends over for dinner and I tried Ina's homemade onion rings, they didn't turn out quite like I planned...for some reason the coating didn't stay on too well but they were still really tasty! Probably user error, oh well.

Today at B's school they are doing some parade thing, the kids are supposed to dress up like animals or something? Anyway, I was chatting with B about it last night and saying how I wasn't sure what she was going to wear, etc.. She told me she didn't want to do it, and since I had no.idea. what to do about a costume for her I told her she could skip it and I'd take her to school late. Bad parenting? I'm not sure but I'm not sweating it. After we talked about her being late, etc. she said "oh good, that means I don't need to rush in the morning." In case there was any doubt, um yeah, she's my daughter! :)

taking notice

This whole are we moving/are we not moving thing is wearing. We will know soon enough and this whole waiting game will all be over but for the time being...its wearing. It's also such a weird place to be emotionally b/c Adam and I have such mixed feelings about it all. There have been times in the past where we have wanted a particular job so badly we could taste it, and then didn't get it and were left heartbroken and with many questions, that at the time, had no answers. This time is different, this time we don't have a strong/passionate/I want this ____ outcome, we're torn. This time this process is easier b/c we are in a better place, emotionally, physically, maybe even spiritually. We love it here, we love our house, our community, our church, B's school, etc. It's a weird place to be.

I always sit and stare at things around the house, its just what I do. I look at how the light pours into a room, or how it doesn't in another (thats the photog in me), I look at a light fixture that I hate and obsess about how I want to change it out, I stare at a wall and how the paint color looks different on the same wall 2 yards away, etc.. It's just what I do, always thinking/plotting/planning how I want to change things or leave them exactly the same. I think its part of the creative process in my brain that doesn't ever quite get turned off. Lately I've been taking notice of little nooks around my house, things I will miss if we have to move. Some things can be re-created in a different home, but some can't. I love this little spot in my kitchen, I love the window, the old chair that B stands on and stares outside, the 2 hook which holds her aprons, etc.. Its something I will miss if we have to move, so for now, I'll continue to stare. xo

sickness, meatless Monday recipe and a house

So I thought I was getting sick and then I thought I wasn't! And then, I woke up today feeling pretty badly, so once I got B out the door to school I crawled back into bed and slept for 3 more hours. Ugh, I think I need to cancel mi casa tonight which makes me sad since we only have 3 left of the semester (which, how is that possible by the way?!!)!! Ugh, I hate being sick! Sorry, I'll stop complaining, I realize its a fact of life.

Anyhoo, I have a tasty recommendation for meatless Monday. I'm always on the hunt for good dinner recipes and I do think its good to pass on meat every now and again. So, last night I tried this Mexican lasagna and it was a hit! Adam and I both loved it (I didn't have B try any, knew the hot sauce/black bean combo wasn't gonna fly). Its super easy, quick to throw together and is really satisfying even without meat (which, says a lot to me b/c it seems when I eat a vegetarian meal I'm often not quite satisfied at the end). I would definitely give it a whirl if you like Mexican food!

And since I might have to move (and that aside, I love looking at houses online) here is a house in the area that we might be moving to that I think has some charm, needs some work of course but kinda cute. Thoughts? xo

I have a busy morning of photo ordering, photo invoicing, and business taxes starring me in the face, and to top it off, technical problems! Ay yi yi...its never a good thing to be flustered by 8am is it? I hope the day only goes up from here! my latest obsession

I think I'm getting sick. I hardly ever get sick so I guess I'm due but you know when you get that feeling in your throat and you're pretty sure somethings coming? That's where I'm at today. We're having neighbors over for dinner tonight, we don't know them super well so I look forward to getting to know them better! I think I'm gonna make my Italian beef drip sandwiches that I've referenced before - sooo good and simple.

So, I'm about to share something with you that could potentially change your life. Well, its changed mine. :) Over this past year I've become slightly obsessed with salted carmel. I think the combination of salty and sweet is about the best.thing.ever. My mom has graciously fed my addiction by sending them in my Easter basket, having them for my on my nightstand when I come home for a visit, etc.. they never disappoint. Well, nowadays I feel like everywhere I turn there are salted carmel recipes -and I must try them all!!! For mi casa on Tuesday I tried these salted carmel shortbread bars and oh.my.gosh. they were some of the best things my mouth has ever tasted!!!! Seriously, make them NOW and you're welcome in advance. :)

In another randomness, I bit the bullet and ordered Adam some glasses online...they should be arriving any day...I'm slightly nervous, hope we did it right! Getting out my ruler and measuring his pupilary distance seemed a bit dodgy at best. Fingers crossed!

So Adam said he thought his interview went well! He said he felt good about it and everyone was super nice so now we wait. I asked him to drive around the town and scout out some of the houses I'm intrigued by, some he said were in sketchy parts of town and some were great so...we'll see. I think we both agree the waiting is the hardest part. The other night while Adam was gone I was putting B to bed and saying prayers and she whispered "pray daddy doesn't get the job" -cracked me up! Seemed bad form to pray against him during an interview but I said "how about we just pray for God's best for us?" Sweet girl. She's like her mama, doesn't like change!

lets see...

I really meant to have taken some pics of B's new haircut by now but it hasn't happened. BUT, Easter is in 2 days and of course I'm gonna snap a few of her in her new Easter dress so pics coming soon, grandmas!

This week we've gone to the kids museum, done a little shopping, gotten some frozen yogurt (I'm not gonna lie, the first couple weeks of Lent I was pretty hard-core w/ the no dessert thing, these past couple weeks I've been plain awful. Sigh. I'm weak.), got our nails done, and we're thinking today we might hit up the zoo. The weather in Waco is so nice right now, loving the sunshine and 70-80 degree weather!

Tomorrow is our church Easter egg hunt...B always looks so cute filling her basket as fast as she can. She has been asking for DAYS (if not weeks now) how many more days until Easter, I'd like to think its b/c she can't wait to celebrate the rising of our savior but I think she's just eager to wear her new dress and eat chocolate bunnies. :) Last night we were at church for our Maundy Thursday service/potluck, I made these chicken and cheese taquitos, they were delish! I've shared this recipe before but if you haven't tried it you should, so easy and so tasty!

This is random but for mi casa this week we met up with a couple other mi casas at church and cheered on the Lady Bears to their 40-0 victory and national championship status!! HOLLA!! Sic em bears!!! (its fun to live in a college town especially when the sports teams are doing SO well!)

I haven't had much of a chance to get work done this week so no new blog post but b/c I prefer posts w/ photos, here's another sneak peek of Josh and Noelle. :) Have a great weekend everyone, and happy Easter!!! xo

spring break now Easter break?!

So Brennan just had spring break a couple weeks ago and know she is off school for a week for Easter break?!! What the heck?! I remember when I was a kid my mom commenting about how it seemed like I was out of school more than I was in school due to all the breaks we had. As a kid I thought this comment was ludicrous, now, I realize she may have been onto something! Good grief, breaks!

Anyhoo...not much work will be getting done this week but oh well. I've tried some new recipes that I think are worth a go so here are the links to orange and white chocolate muffins, and cheddar corn chowder. I halved the corn chowder recipe and it still made enough for an army so maybe a good company dinner? And if you love bacon like my family does, you might want to make a bit more for garnish b/c it goes fast!

Adam will be heading to east Texas this weekend for his on-campus interview next week, as always, prayers are appreciated! Have a great day! xo

whew, busy day!

Today has been go, go, go and I'm wiped! I haven't had a chance to take a pic of the ninner yet but her haircut is the cutest EVER!! I keep telling her how cute she is and she keeps saying "you've already told me that!" but I can't help it. :)

Winn mi casa took SECOND PLACE in the olympics- HOLLA!! I was so proud of my darlings, they put their best effort in and rocked it! We took third last year and second this year so next year...maybe we'll take home the trophy?! We had a good time, it was a long, hot day in the sun but a fun time. (our shirts turned out pretty darn cool too, I'll try to remember to snap a photo, its an unicorn wearing aviator sunglasses and it says "all we do is winn" down the side). :)

I made cheddar/chive/jalapeno biscuits today, they were kind of awesome if I do say so myself. I'm too lazy to write down the recipe from my cookbook but I'm sure if you google them something good will show up!
