herbed risotto with chicken and carmelized onions

B/c this meal was sooo tasty and I think everyone should know about it, I'm taking a break from my no-blogging to blog this dinner. :)

For dinner last night I made this. If you like risotto and don't mind spending a little more time on dinner this meal is a must.try. I did do a couple things differently than the recipe said and I'm going to outline them here b/c it made it a lot easier.

First, I cut the chicken into pieces rather than cooking the breasts whole and shredding them later (although I did shred them a bit after they were cooked, but since they were already in small pieces this process was fast).

I didn't check the temperature of the chicken after it was in the chicken stock mixture, I let the pieces stay in there a bit and then took them out, cut a couple open to make sure they were done and called it a day.

I didn't use a dutch oven and dirty yet another pan. I started in a deep saucepan that I knew was large enough to fit all the contents. It worked great and was less clean up.

Adam and I both loved this meal and Adam requested it make a regular appearance at dinner time. :) Enjoy! xo

still trying

I'm still trying to work my way out of my "I don't feel like blogging or touching my camera" funk -I'm not quite there yet. Thank you to those of you who check in regularly for updates, I'm sure at some point I'll bounce back. :)

I do recommend this banana cake with vanilla bean frosting, easy and delish. I made it for a girlfriend's birthday the other day and it was gone in seconds! Also, for a Memorial day bbq we went to, I made 2 types of potatoes, recipes here and here. Since we have plenty of leftovers and some of my mi casa darlings are around for the summer (or are in town this week) they are coming over for dinner and a movie tonight -can't wait to hug them! Tuesday nights have been too quiet around here since Baylor got out for the summer! Hope everyone is having a good week! xo

a funny conversation w/ B

(A little background, right now bugs in Waco are brutal, they are everywhere and are on a biting frenzy. The other day while I was giving B her bath I noticed she had several bites on her underwear line -ouch!)

So yesterday this was a little conversation we had that made me chuckle:

B: mom, you know those proactiv commercials we see on tv?

M: yes

B: well, I think I need some

M: Why do you think that?

B: remember during my bath when we saw all those red spots?

M: ohhh, yes, I do remember but those are bug bites and proactiv is for your face when you have zits, it won't help with bug bites, those will just go away with time. You have beautiful skin and don't need any proactiv.

B: Oh, okay.

I love that she remembered the commercial and knew it was for red spots that you wanted to go away! Cute girl. :)

good food and good music

I feel like the ol' blog has been a bit sparse lately, sorry about that! I haven't had much to blog and I think I've been a little uninspired...hopefully that will change soon. I have been in the kitchen a bit and have some yumminess to share:

For my father-in-law's birthday dinner I made grilled skirt steak with chimichurri sauce, (I don't remember what magazine I got the recipe from) but if you like a sauce with a kick I would definitely recommend it. You could take the seeds out of the jalapeno to take away heat if you'd like but it sure was packed full of flavor and would be good on many types of meat I think!

2 cups fresh cilantro
2 cups fresh parsley
1/2 cup olive oil
3 T dry red wine (such as Shiraz)
3 T fresh lime juice
1 T balsamic vinegar
2 jalapenos, roasted and peeled
1 garlic clove
salt and freshly ground pepper
5lbs skirt steak

In a blender, mix first 8 ingredients plus 2 T of water. Season with salt. Season steaks with salt and pepper, grill to desired doneness. Serve steak with sauce on top.

The taco shells I referenced a few posts below were good! Nothing to write home about really, but if you want a good dinner with minimal effort I'd give it a go! I really think the fresh cilantro on top is a must.

I made a salted chocolate carmel cake for my father-in-law's birthday dessert, it was a fair amount of work and it was good but I do think if you googled a recipe something equally good would show up. There wasn't anything about it that stood out to me that would make it worth it to type the whole recipe out here. :)

Yesterday I made these scones for breakfast and I do think they were some of the flakiest scones I've ever had. Right from the oven while they were still warm they were irresistible! (I may or may not have had 3...and I wonder why I can't get rid of these extra 20lbs I've been holding onto for years?!). I brushed the top of them with cream and sprinkled them with sugar before I put them in the oven ~ delish!

Last night for dinner I made this Pesto Pasta and it was SO good and so easy! (even B liked it and since she is so picky, I'd call that a success!). I'm always looking for good vegetarian dishes so this is a keeper! I haaaaaaaaaaaate asparagus so I left that out but added some pine nuts and I thought that was a good addition. It was such a nice night last night so we set up the card table and ate dinner outside, loved it!

Happy (late) Mother's Day!

I hope all you moms out there had an extra special day on Sunday! My sweet family bought me pretty flowers, made me cards, and took me out to a yummy lunch. The other day at B's school they hosted a mother/daughter tea, B made these for me, sweet girl. I hear they don't do mother/daughter teas any more once your child goes to kindergarten, made me sad knowing that was likely my last one. Sniff.


I personally think I have the best mom and mother-in-law out there so.....theres that. :)

I'm working on my travel schedule for the summer and will hopefully have that ready by tomorrow if anyone out there wants a session! (if anyone reading this lives in Salt Lake City, UT or has friends/family there who might want a session, can you let me know? I have a client out there who wants me to come out but I need a little more interest before I can justify the trip -thanks!). Happy Tuesday! xo

sneak peek and other randomness

My in-laws left yesterday (boo!) and now B has taken to randomly shouting out "I want grandma!" at any given moment. Ah....let the grandparent withdrawal begin! Fun times. :) We loved having them here, as always, it seems to go by so fast!

I can't believe we're already to mid-May, B only has 2 weeks left of school! I can't believe my baby will be a kindergartner!! Is it me or does the school year seem to fly by?!

The weather in Waco has been really nice the past couple of days, cooler, in the 70s and just so nice in the evenings. I know this "cold" spell is going to be brief before the real Texas heatwave comes for the summer so I'm trying to soak up every second!

I've had a sore throat for a week and I think its FINALLY gone! Between my sickness, neck pain, sore throat, I feel like I'm an old woman with non-stop aches and pains!

May seems to be the month of birthdays, I know in my family there are a ton but also, it seems like a lot of my friends have May birthdays. Tonight I'm going to a birthday party for some friends, its a 1920s theme and we're supposed to dress up. I'm sure it will be a blast, I think I have figured out what I'm going to wear but I have no ideas for Adam....thoughts?

yesterday was fun

Sorry for the blog lull! My in-laws are in town so we're having fun playing with them! Yesterday they took B for the whole day so Adam and I could sneak away. For our fun day we:

*drove to Austin
*ate an a-maz-ing lunch at Hula Hut
*walked around south Congress and did some shopping
*Adam had too much fun in an old fashioned candy shop and walked out with lots of gummies
*I got a Michael Jackson cupcake from Hey Cupcake
*we saw the movie The 5 Year Engagement
*we both got pedicures that were to.die.for! In nearly 12 years of marriage we've never gotten pedicures together and we decided we might need to make that happen on a regular basis, it was pretty fabulous.
*we got caught in a crazy thunder/lightening storm
*on our drive back to Waco we stopped at BJ's for a late dinner and some pazookie (my fave)

All in all, a wonderful day with my love! THANK YOU Doug and Kemi for watching B, it was such a treat!!

So that's the haps around here. I'm gonna go enjoy my in-laws for the couple more days we have them! Happy Tuesday, all! xo
